Fluffy Rice
Method
Wash the rice
Place the rice into a pot.
Cover with cold water, swirl gently, then drain.
Repeat until the water runs mostly clear.
This removes excess starch and helps the rice cook fluffy rather than sticky.
Add water
Once washed, add cold water to the pot.
Use the finger method: place your index finger so it just touches the surface of the rice.
Add water until it reaches just below the first joint of your finger.
Cook
Place a lid on the pot and set over high heat.
Bring to the boil.
Once boiling, reduce heat to the lowest setting and cook for 15 minutes.
Do not lift the lid or stir during cooking, the rice cooks through steam.
Rest
After 15 minutes, turn off the heat but keep the lid on.
Leave the rice to sit undisturbed for at least 10 minutes.
This finishes the steaming and prevents mushy rice.
Fluff and serve
Remove the lid and gently fluff the rice with a fork.
Serve hot.
