Fluffy Rice

Method

Wash the rice

  • Place the rice into a pot.

  • Cover with cold water, swirl gently, then drain.

  • Repeat until the water runs mostly clear.

  • This removes excess starch and helps the rice cook fluffy rather than sticky.

Add water

  • Once washed, add cold water to the pot.

  • Use the finger method: place your index finger so it just touches the surface of the rice.

  • Add water until it reaches just below the first joint of your finger.

Cook

  • Place a lid on the pot and set over high heat.

  • Bring to the boil.

  • Once boiling, reduce heat to the lowest setting and cook for 15 minutes.

  • Do not lift the lid or stir during cooking, the rice cooks through steam.

Rest

  • After 15 minutes, turn off the heat but keep the lid on.

  • Leave the rice to sit undisturbed for at least 10 minutes.

  • This finishes the steaming and prevents mushy rice.

Fluff and serve

  • Remove the lid and gently fluff the rice with a fork.

  • Serve hot.
