Piña Colada Chia Pudding

Ingredients

  • 1 can of pineapple pieces and juice

  • 1 can of coconut cream

  • 5 tablespoons chia seeds

Pantry staples:

  • 1 cup water

  • Optional: Vanilla protein powder, honey/maple syrup

Method:

  • Add the juice and pineapple pieces to a blender.

  • Pour in the coconut cream, water, and a pinch of salt.

  • Blend until smooth.

  • Taste and adjust the sweetness to your liking using sugar, honey, or maple syrup.

  • Divide the chia seeds into jars, then pour the pineapple-coconut mixture over the seeds.

  • Place in the fridge overnight and serve chilled the next day.
