Cajun Shrimp Alfredo
Ingredients
300 g prawns
400 g pasta
1 onion, diced
Garlic (optional but great if you have it)
200 ml chicken stock or white wine (or just water if you have neither)
300 ml fresh cream
2 tsp Cajun seasoning
Pantry staples:
1 tbsp butter or oil
Parmesan cheese (as much as you like for the sauce and topping)
Method
Boil pasta until just tender. Reserve 1 cup pasta water, then drain.
Heat butter or oil in a pan. Toss prawns with 1 tsp Cajun seasoning and sear 2 to 3 minutes until pink. Remove.
In the same pan, cook onion until soft. Add garlic for last 30 seconds.
Add stock, wine, or water. If using wine, simmer 2 to 3 minutes until alcohol cooks off.
Lower heat, add cream and remaining 1 tsp Cajun seasoning. Simmer 3 to 5 minutes until slightly thick.
Stir in parmesan until melted. Add pasta and prawns, tossing to coat.
Loosen with pasta water if needed. Finish with extra parmesan and adjust seasoning.
