One Pot Mince Ragu
Ingredients
500g beef mince (or whatever you can afford - no stress)
2 onions, diced
3 large carrots or 5 small carrots, grated
Garlic (as much as your heart desires)
1 x 15g can tomato paste
2 x 400g cans chopped tomatoes
100ml water
Optional:
3 tbsp sweet chilli sauce (a secret non-traditional ingredient to a good mince ragu, it adds great flavour and sweetness)
If you don’t have any sweet chilli sauce, you can add a heap teaspoon of sugar (preferably brown) and chilli powder .
Method
Heat a large pot over medium-high heat. Add the mince and break it down as much as possible while it browns for a good texture.
Add onion, garlic, and grated carrot. Cook until softened. Don’t worry if it looks like a lot — it will cook down and soak up the flavours. Tip: This is a great way to use leftover vegetables.
Stir in tomato paste and sweet chilli sauce. Cook 3–5 minutes until the paste darkens in colour.
Add chopped tomatoes, bring to a boil, then reduce to low heat. Simmer uncovered for at least 45 - 90 minutes, stirring occasionally, until thick and rich.
Serving Versatility
Spaghetti Bolognese – Stir through pasta and top with grated cheese.
Mince on Mash – Serve over mashed potatoes.
Mexican Twist – Add ½ tsp each oregano, cumin, paprika plus a can of beans.
Nachos – Spoon over corn chips with toppings.
Burrito Wraps – Wrap with rice and veg.
Chilli & Rice – Serve over rice.
Leftover Brekkie – Reheat on toast with a fried egg.
