Creamy Chorizo Penne Pasta

Ingredients

  • 150 g mild chorizo

  • 400 g penne pasta

  • 140 g tomato paste

  • 200 ml cream

  • 5 cloves garlic

  • Parmesan cheese

Pantry Staples

  • Oil

  • Garlic powder

  • Onion powder

Method

  • Slice the chorizo thinly.

  • Heat oil in a frying pan on medium heat. Fry the chorizo until crispy, then remove and set aside.

  • Crush the garlic and add it to the pan. Cook for 30 seconds until fragrant.

  • Add the tomato paste and stir well.

  • Pour in the cream. Add garlic powder and onion powder to taste. Stir until smooth.

  • Once the sauce starts to bubble, turn the heat down low. Add the chorizo back in and let it simmer.

  • Boil a pot of water and cook the pasta according to the packet instructions.

  • Drain the pasta and mix it through the sauce.

  • Serve and sprinkle with parmesan if using.

  • Serve with salad and garlic bread or simply on its own.
