Creamy Chorizo Penne Pasta
Ingredients
150 g mild chorizo
400 g penne pasta
140 g tomato paste
200 ml cream
5 cloves garlic
Parmesan cheese
Pantry Staples
Oil
Garlic powder
Onion powder
Method
Slice the chorizo thinly.
Heat oil in a frying pan on medium heat. Fry the chorizo until crispy, then remove and set aside.
Crush the garlic and add it to the pan. Cook for 30 seconds until fragrant.
Add the tomato paste and stir well.
Pour in the cream. Add garlic powder and onion powder to taste. Stir until smooth.
Once the sauce starts to bubble, turn the heat down low. Add the chorizo back in and let it simmer.
Boil a pot of water and cook the pasta according to the packet instructions.
Drain the pasta and mix it through the sauce.
Serve and sprinkle with parmesan if using.
Serve with salad and garlic bread or simply on its own.
