Tuna Mornay
Ingredients
2 cans of lemon pepper tuna
1 litre of milk
5 potatoes, sliced
Pantry staples:
1 tablespoon of flour
1 tablespoon of margarine or butter
Salt and pepper to taste
Method
Melt the butter and flour in a saucepan over a medium heat and stir constantly to form a thick mixture. Cook for 3 to 5 minutes to cook off the flour.
Slowly add the milk a little at a time, stirring well after each addition to keep the sauce smooth.
Continue adding milk until the sauce thickens and coats the back of a spoon.
Add the tuna and mix well and season with salt and plenty of pepper to taste.
Layer the sliced potatoes in a baking dish and pour the tuna sauce over the top.
Cover with foil and bake in the oven at 180 degrees for 30 minutes or until the potatoes are cooked through. Check by piercing with a fork.
Once cooked, remove foil and broil until the top is golden.
Serving alternative: you can also serve this with some cooked rice instead of potatoes, which is just as good.
