Lentil Chilli Con Carne
Ingredients
1 onion
4 garlic cloves
1 can lentils
1 can black beans
1 can of tomato paste
2 cans of canned tomatoes
1 cup of rice
Pantry staples:
Oil
1 tsp ground cumin
1 tsp chilli powder
1 tsp smoked paprika
Salt to taste
Water
Method
Heat oil in a large pot. Add onion and cook until soft and translucent. Add garlic and cook for 30 seconds until fragrant.
Rinse lentils well, then add to the pot and cook briefly to build flavour.
Add tomato paste and cook for 3 to 5 minutes until darkened.
Stir in 1 tsp each cumin, chilli, and smoked paprika. Season with salt to taste.
Add canned tomatoes, bring to a gentle simmer, then reduce heat and simmer as long as possible to develop flavour.
To cook the rice, rinse under cold water until the water runs clear.
Add cold water to just below the first knuckle of your finger above the rice and cover with a lid.
Bring to the boil, then reduce to low and cook for 15 minutes until the water is absorbed and rice is tender.
