Lentil Chilli Con Carne

Ingredients

  • 1 onion

  • 4 garlic cloves

  • 1 can lentils

  • 1 can black beans

  • 1 can of tomato paste

  • 2 cans of canned tomatoes

  • 1 cup of rice

Pantry staples:

  • Oil

  • 1 tsp ground cumin

  • 1 tsp chilli powder

  • 1 tsp smoked paprika

  • Salt to taste

  • Water

Method

  • Heat oil in a large pot. Add onion and cook until soft and translucent. Add garlic and cook for 30 seconds until fragrant.

  • Rinse lentils well, then add to the pot and cook briefly to build flavour.

  • Add tomato paste and cook for 3 to 5 minutes until darkened.

  • Stir in 1 tsp each cumin, chilli, and smoked paprika. Season with salt to taste.

  • Add canned tomatoes, bring to a gentle simmer, then reduce heat and simmer as long as possible to develop flavour.

  • To cook the rice, rinse under cold water until the water runs clear.

  • Add cold water to just below the first knuckle of your finger above the rice and cover with a lid.

  • Bring to the boil, then reduce to low and cook for 15 minutes until the water is absorbed and rice is tender.
