Spaghetti Aglio e Olio

Ingredients

  • Spaghetti pasta (400 grams)

  • 1 lemon

  • ½ cup of oil (preferably olive oil or similar)

  • Teaspoon of chilli flakes

  • 5 cloves of garlic thinly sliced

  • 1 bunch of parsley

Method

  • Place a large pot of well salted water on the heat and bring to the boil.

  • Peel and thinly slice the garlic. Wash and finely chop the parsley.

  • Once boiling, add the pasta and cook for 1 minute less than the packet instructions. Reserve 1 cup of pasta water before draining.

  • While the pasta cooks, add olive oil and garlic to a large frying pan over medium heat.

  • Gently fry until the garlic edges are lightly golden, then add the chilli flakes.

  • Add the pasta directly to the pan and toss vigorously, adding a little pasta water to create an emulsion.

  • Once the sauce reaches your desired consistency, stir through the parsley and a squeeze of lemon. Adjust chilli and lemon to taste.

  • Serve immediately.
