Spaghetti Aglio e Olio
Ingredients
Spaghetti pasta (400 grams)
1 lemon
½ cup of oil (preferably olive oil or similar)
Teaspoon of chilli flakes
5 cloves of garlic thinly sliced
1 bunch of parsley
Method
Place a large pot of well salted water on the heat and bring to the boil.
Peel and thinly slice the garlic. Wash and finely chop the parsley.
Once boiling, add the pasta and cook for 1 minute less than the packet instructions. Reserve 1 cup of pasta water before draining.
While the pasta cooks, add olive oil and garlic to a large frying pan over medium heat.
Gently fry until the garlic edges are lightly golden, then add the chilli flakes.
Add the pasta directly to the pan and toss vigorously, adding a little pasta water to create an emulsion.
Once the sauce reaches your desired consistency, stir through the parsley and a squeeze of lemon. Adjust chilli and lemon to taste.
Serve immediately.
