Mushroom Haloumi Burgers

Ingredients

  • 2 packs of 200g halloumi, sliced

  • 6 whole mushrooms

  • 1 brown onion, sliced

  • 1 tomato, sliced

  • 6 burger buns, split

  • Baby leaf lettuce

Pantry staples:

  • Salt and pepper

  • Oil

  • Aioli or mustard and mayonnaise mixed

Method

  • Lightly oil and season the mushrooms, then place in a preheated 180-degree oven and cook for 20 minutes.

  • While the mushrooms are cooking, prep the lettuce and onion. Place the sliced onion in water to mellow the flavour.

  • Heat a pan and sear the sliced halloumi until golden brown on both sides.

  • Lightly oil the burger buns and toast cut side down in the pan until golden.

  • Once everything is ready, assemble the burgers, put your favourite sauce (aioli or seeded mustard and mayo mix both work great but up to you).

  • Serve while hot and enjoy.
