Mushroom Haloumi Burgers
Ingredients
2 packs of 200g halloumi, sliced
6 whole mushrooms
1 brown onion, sliced
1 tomato, sliced
6 burger buns, split
Baby leaf lettuce
Pantry staples:
Salt and pepper
Oil
Aioli or mustard and mayonnaise mixed
Method
Lightly oil and season the mushrooms, then place in a preheated 180-degree oven and cook for 20 minutes.
While the mushrooms are cooking, prep the lettuce and onion. Place the sliced onion in water to mellow the flavour.
Heat a pan and sear the sliced halloumi until golden brown on both sides.
Lightly oil the burger buns and toast cut side down in the pan until golden.
Once everything is ready, assemble the burgers, put your favourite sauce (aioli or seeded mustard and mayo mix both work great but up to you).
Serve while hot and enjoy.
