Egg Cups
Ingredients
6 eggs
150ml of cream
12 bread slices
1 onion diced
1 capsicum diced
200 grams of feta
100 grams of smoked ham
Salt and pepper
Method:
Preheat oven to 180°C.
Lightly oil a muffin tin and press a slice of bread into each muffin mould.
In a bowl, whisk all eggs with the cream. Season with salt and pepper.
Add diced vegetables, crumbled feta, and ham into the egg mixture.
Pour the egg mixture into the muffin moulds about ¾ of the way full, being careful not to overfill.
Bake in the oven for 20 minutes, or until the egg mixture has set. To check, lightly press a knife into the centre at a 45-degree angle.
Remove the egg cups from the tin and allow to cool.
Repeat the process with any remaining mixture or store the leftover mixture in the fridge to make fresh batches later.
