Egg Cups

Ingredients

  • 6 eggs

  • 150ml of cream

  • 12 bread slices

  • 1 onion diced

  • 1 capsicum diced

  • 200 grams of feta

  • 100 grams of smoked ham

  • Salt and pepper

Method:

  • Preheat oven to 180°C.

  • Lightly oil a muffin tin and press a slice of bread into each muffin mould.

  • In a bowl, whisk all eggs with the cream. Season with salt and pepper.

  • Add diced vegetables, crumbled feta, and ham into the egg mixture.

  • Pour the egg mixture into the muffin moulds about ¾ of the way full, being careful not to overfill.

  • Bake in the oven for 20 minutes, or until the egg mixture has set. To check, lightly press a knife into the centre at a 45-degree angle.

  • Remove the egg cups from the tin and allow to cool.

  • Repeat the process with any remaining mixture or store the leftover mixture in the fridge to make fresh batches later.
