Quick Quiches

  • 6 eggs

  • 150ml cream

  • 1 onion

  • 1 grated carrot

  • ½ bag/60g spinach

  • 250g grated cheese

  • 2-3 pastry sheets

Ingredients

Method:

  • Leave your pastry sheets on the bench to soften.

  • Grease a 20–25 cm round (or similar) dish.

  • Preheat oven to 200°C fan bake (or 210°C bake).

  • In a bowl, crack eggs and pour in the cream. Whisk, season, and set aside.

  • Dice onion and grate carrot. Fry in a little oil with salt and pepper for approximately 3 minutes, or until the vegetables have browned. Let cool.

  • Roughly chop spinach and mix it into the egg mixture.

  • Line your dish with the softened pastry and press it into the edges.

  • Add the cooled vegetables to the egg mixture and stir well.

  • Pour the mixture into the pastry-lined dish. Once the oven is preheated, bake for approximately 20 minutes, or until golden and set.

  • Allow to cool for a few minutes before serving.

  • Store in the fridge for up to 3 days or freeze for later.
