Quick Quiches
6 eggs
150ml cream
1 onion
1 grated carrot
½ bag/60g spinach
250g grated cheese
2-3 pastry sheets

Method:
Leave your pastry sheets on the bench to soften.
Grease a 20–25 cm round (or similar) dish.
Preheat oven to 200°C fan bake (or 210°C bake).
In a bowl, crack eggs and pour in the cream. Whisk, season, and set aside.
Dice onion and grate carrot. Fry in a little oil with salt and pepper for approximately 3 minutes, or until the vegetables have browned. Let cool.
Roughly chop spinach and mix it into the egg mixture.
Line your dish with the softened pastry and press it into the edges.
Add the cooled vegetables to the egg mixture and stir well.
Pour the mixture into the pastry-lined dish. Once the oven is preheated, bake for approximately 20 minutes, or until golden and set.
Allow to cool for a few minutes before serving.
Store in the fridge for up to 3 days or freeze for later.
