Savoury Muffins

  • 300g  cheese

  • 1  can of creamed corn 

    • (or you can use drained canned corn or frozen kernels)

  • 250 ml milk

  • 2 eggs

  • Ham or bacon (optional)

Ingredients

Pantry staples

  • ¼ tsp cayenne pepper

  • ¼ tsp mustard powder

  • 1 tsp salt

  • 125 ml oil (use a flavourless oil like vegetable or grapeseed oil)

  • 300 grams plain flour

  • 3 tsp baking powder

  • 1 tsp baking soda

Method

  • Preheat the oven to 200℃ (390℉) and prepare your muffin tray. You will need to grease any nonstick muffin tray.

  • Place all the dry ingredients in a large bowl and combine (including the additional spices if you are using them).

  • Add the parsley and corn (add the ham/bacon too if you are using it).

  • Make a well in the middle and add the wet ingredients. Using smooth gentle movements, combine all the ingredients.

  • Spoon into your prepared muffin tray and place in the oven for 20-25 minutes until golden brown.

  • Leave in the muffin tray for 10 minutes before turning out onto a wire rack to cool.
