Savoury Muffins
300g cheese
1 can of creamed corn
(or you can use drained canned corn or frozen kernels)
250 ml milk
2 eggs
Ham or bacon (optional)
Ingredients
Pantry staples
¼ tsp cayenne pepper
¼ tsp mustard powder
1 tsp salt
125 ml oil (use a flavourless oil like vegetable or grapeseed oil)
300 grams plain flour
3 tsp baking powder
1 tsp baking soda
Method
Preheat the oven to 200℃ (390℉) and prepare your muffin tray. You will need to grease any nonstick muffin tray.
Place all the dry ingredients in a large bowl and combine (including the additional spices if you are using them).
Add the parsley and corn (add the ham/bacon too if you are using it).
Make a well in the middle and add the wet ingredients. Using smooth gentle movements, combine all the ingredients.
Spoon into your prepared muffin tray and place in the oven for 20-25 minutes until golden brown.
Leave in the muffin tray for 10 minutes before turning out onto a wire rack to cool.
